Our endeavor to offer a cuisine that is as authentic as it is fresh and seasonal led to have many of our raw materials grown by organic farmers specially for us.

different types of chillies

  • Several varieties of chilies, harvested at different points of maturity, including Habenero chili, which is super-spicy
  • Tomatillos, a typical Mexican vegetable (but really a fruit), which belongs to the genus Physalis and characterized by a beige husk fully enclosing the fruit.

  • Chayote, a vegetable (really a fruit) of the gourd family, it can be eaten raw, grilled or fried
  • Epazote, also called ”American goosefoot” in English, is a pungent condiment which is also used as a medicinal plant
  • Original blue corn – its cultivation is significantly more demanding than much improved breeds of yellow corn
